美味到停不了嘴的香卤鸭脚
最近喜欢上卤鸭脚和鸡爪之类的小吃,但是外面的太不卫生了。既然喜欢美食,当然自己亲手做的更美味啦!
特地买上新鲜的土鸭脚,配上新鲜的柠檬叶和其他香料,卤上满满一锅香喷喷滴卤鸭脚,蛮有成就感!如果喜欢鸡蛋,可以放入鸡蛋之类的一起卤制。
我的卤鸭脚,是先炒香了,再卤制的。这样卤出来的鸭脚特别香,连里面的鸭骨都是香的。卤好后,放入冰箱或是在凉天的时候不放冰箱亦可,让卤汁浸泡鸭脚完全入味。

Steps to make 美味到停不了嘴的香卤鸭脚

  • 1.将新鲜鸭脚洗净,用剪刀剪去尖爪。
  • 2.冷水入锅,里面放上拍碎的姜块和米酒。
  • 3.水烧开后,捞起鸭脚过冷。最好是多过几次。而且用酒一起泡洗,完全去掉腥味。
  • 4.锅烧热油,爆香蒜瓣。
  • 5.放入已经过冷的鸭脚爆香。
  • 6.加入生抽和老抽。
  • 7.放入各种香料。
  • 8.翻炒鸭脚出香味。
  • 9.加入没过鸭脚的水后,加盐调味。
  • 10.开大火烧开。
  • 11.将烧开的鸭脚和已经洗干净的鸡蛋放入电压力锅内。
  • 12.按10分钟时间到后,将鸡蛋外壳轻敲裂。将卤好的鸭脚和鸡蛋放冰箱或是放凉处浸泡一天以上入味即可。
