舌尖上的青涩风情——抹茶蛋糕卷

Steps to make 舌尖上的青涩风情——抹茶蛋糕卷

  • 1.准备好所有的食材
  • 2.馅料的食材
  • 3.90g蛋黄+20g细砂糖,用手动打蛋器打匀,不要打发
  • 4.加入牛奶
  • 5.加入色拉油搅打均匀
  • 6.一起筛入低筋面粉,抹茶粉
  • 7.用橡皮刮刀轻轻上下拌匀,不不要过度搅拌以免起筋
  • 8.把蛋白放入另外一个盆中
  • 9.用电动打蛋器慢速把蛋白打到出现大泡时加1/3的细砂
  • 10.打到蛋白泡沫发白再加入1/3的砂糖用高速打
  • 11.等到蛋白浓稠时再加入剩下的1/3砂糖
  • 12.搅打至提起打蛋器时出现弯曲的尖角就表示已经到湿性发泡了,打到湿性就可以
  • 13.将1/3蛋白放进抹茶面糊中
  • 14.轻轻上下翻拌均匀
  • 15.再分次加入其它2/3的蛋白糊
  • 16.轻轻上下翻拌均匀
  • 17.拌好后倒入铺好烘焙油纸的烤盘内
  • 18.用刮板抹平表面
  • 19.震几下去掉大气泡
  • 20.入预热好的烤箱170度烤15分钟左右
  • 21.烤好后戴手套取出
  • 22.倒扣撕去油纸在蛋糕的下方放一张油纸,方便卷起
  • 23.把淡奶油倒入另一个打蛋盆中
  • 24.倒入细砂糖
  • 25.用电动打蛋器打发至不会流动的状态(可以裱花的程度)
  • 26.用抹刀把鲜奶油均匀的脱模在蛋糕坯
  • 27.从下往上卷起
  • 28.外包一层油纸
  • 29.放冰箱冷藏定型再切块就可以了
