栗蓉奶油蛋糕卷
不知从什么时候开始知道有一种叫瑞士卷的点心,感觉它好神奇、好高贵!其实后来才知道它就是海绵蛋糕的一种。在烤炉中将材料烤成薄薄的蛋糕,加上了果酱和奶油(混糖奶油,牛奶蛋糊奶油等),和切碎了的果肉,卷成卷状!自从学会做蛋糕卷,就不用再找什么理由做奶油蛋糕了。想吃什么口味卷什么东西!奶油、芝士、巧克力、咖啡、草莓、芒果、紫薯。。。。。当然还有栗子啦! 怎能抵挡它的诱惑!

  • 低粉58克
  • 砂糖54克
  • 蜂蜜25克
  • 蛋黄5个
  • 蛋白4个
  • 黄油12克
  • 牛奶29克
  • 栗子仁100克
  • 淡奶油100克
  • 砂糖10克
  • 无花果2颗
  • 蓝莓7颗
  • 香草精几滴

Steps to make 栗蓉奶油蛋糕卷

  • 1.蛋黄加入12g细砂糖、蜂蜜25g,我还加了几滴香草精
  • 2.用打蛋器打至颜色略微发白
  • 3.蛋白分三次加入54g细砂糖
  • 4.打至湿性发泡
  • 5.将1/3打发好的蛋白霜加入蛋黄中,用刮刀翻拌均匀
  • 6.加入过筛后的低筋面粉,翻拌均匀
  • 7.加入剩下的蛋白霜
  • 8.继续翻拌均匀
  • 9.牛奶和黄油加热至70度
  • 10.加入到面糊中,拌至面糊呈现光泽即可
  • 11.将面糊倒入铺了烘焙纸的烤盘中,轻震几下震出大气泡
  • 12.放入预热180度烤箱, 烘烤13分钟
  • 13.烤完取出冷却后,把蛋糕四周切整齐
  • 14.准备夹馅:我用的袋装的栗子仁,用搅拌棒打成栗子蓉
  • 15.100克淡奶油加10克砂糖用打蛋器打至有纹理
  • 16.加入栗子蓉
  • 17.再次打匀即是栗蓉奶油馅
  • 18.均匀抹上打发好的栗蓉奶油馅
  • 19.用油纸慢慢卷起,放冰箱冷藏定型半小时以上
  • 20.切段,用水果装饰一下即可
