抹茶黄桃蛋糕卷
前段时间朋友送了点抹茶,做了几次面包都不满意,最近开始尝试蛋糕,发现在比例上还是没怎么把握好,烤出来的颜色离我想像中的颜色相差很远。
趁机做了这款小朋友喜欢吃的蛋糕卷

  • 鸡蛋5个
  • 白砂糖50g
  • 色拉油50g
  • 牛奶60g
  • 低筋面粉80g
  • 抹茶粉5g
  • 白醋2滴
  • 1g
  • 淡奶油150g
  • 糖粉15g
  • 黄桃罐头2块

Steps to make 抹茶黄桃蛋糕卷

  • 1.色拉油、牛奶装碗中,搅拌均匀
  • 2.分次加入蛋黄搅拌均匀
  • 3.筛入低筋面粉,切拌均匀
  • 4.将拌好的面糊留出少许装碗中
  • 5.往蛋黄糊中筛入抹茶粉,切拌均匀
  • 6.蛋白中加入白醋,打至粗泡,分三次加入50g细砂糖,打至蛋白有大弯勾
  • 7.取少许打发好的蛋白放预留的蛋黄糊中,切拌均匀
  • 8.拌好的蛋糕糊装裱花袋中,切一个小口,随意在烤盘上挤出纹路
  • 9.将1/3蛋白取出倒入抹茶蛋黄糊中,用橡皮刮刀采用切拌或者从下往上翻拌的方法轻轻翻拌均匀
  • 10.将拌好的抹茶蛋黄糊全部倒进余下的蛋白盆中,用同样的手法翻拌均匀
  • 11.用手机启动阿里小智程序,选择长帝智能烤箱,选择 蛋糕/面包 功能,设定烘烤温度为160度,烘烤时间为35分钟,等烤箱预热好后,将烤盘放入烤箱中上层烤1分钟左右取出
  • 12.将所有的抹茶蛋糕糊倒在烤盘上,端起烤盘震动几下
  • 13.将烤盘重新放入烤箱中上层,160度烤20分钟左右取出蛋糕,倒扣放凉备用
  • 14.150g淡奶油加15g糖粉打发到硬性,然后将蛋糕有图案的一面放在干净的油纸上,抹上一层奶油和切片的黄桃
  • 15.轻轻将蛋糕卷起,用油纸卷紧放入冰箱中冷藏2小时左右去掉油纸切块。
