果干米糕
过年要做米糕,寓意步步登高,那就动手做吧。为了口味更丰富,就加芒果果干和蔓越莓干,吃起来更好吃。为了颜值,我也是和网红们一样,直接用了模具蒸的,看起来也好看。而且这款米糕是用的传统米糕的做法,加入了大米饭,而发酵方法也是传统方法,没有用酵母粉,而且用的自制的米酒发酵的,米香味更浓郁,看来传统的方法确实好。

Steps to make 果干米糕

  • 1.备好米饭和自制的米酒。米酒最好是用自制的,有活性,很多瓶装的米酒市售米酒都是灭活的,虽然是米酒的味道,但没有了活性是无法发酵的。
  • 2.米酒和米饭一起放入破壁机里。
  • 3.搅打成糊。
  • 4.加入奶粉搅拌到融化。
  • 5.加入粘米粉和适量白糖。我不喜欢太甜的,糖放的少,可以根据自己口味调整用量。
  • 6.搅拌成浓稠细腻的糊,静止发酵。
  • 7.发酵到2倍左右的大小,里面成蜂窝状。
  • 8.发酵好的糊搅拌排汽。
  • 9.蔓越莓干,芒果干切小丁。
  • 10.果干铺到模具底部。
  • 11.倒入模具8份满。
  • 12.再发酵20分钟左右。
  • 13.开水上笼蒸18分钟左右。
  • 14.蒸好的米糕。
  • 15.脱模晾凉即可。非常松软好吃的米糕。
