[徽菜]--麻辣小龙虾
如今夏季吃小龙虾已经风靡全国,当然做法各有不同,口味也就不一样啦!不管哪种做法,爱吃龙虾的人肯定都不愿意错过的!在宣城每天晚上坐在大排档品着小龙虾,喝着冰镇的啤酒成为一道亮丽的风景线呢!
不过话说安徽最有名的龙虾应该当属合肥的小龙虾了吧?不过一方水土养育一方人,总觉得自己家的就是最好的,呵呵! 妈妈专门捕了一点带过来给我们吃!就做个家乡风味的麻辣小龙虾吧!呵呵...很放心的吃,的确很香呀![自我感觉,哈哈....]不过真的很干净哦!这个龙虾是我妈妈攒着的,小的自己吃了,大个点的都留给我们呢,一共带了有21个,刚好烧一大碗。妈妈在家每天都换水,带我这来的时候我又养了2天,非常干净的!而且虾黄也很满呢!

Steps to make [徽菜]--麻辣小龙虾

  • 1.小龙虾漂水几天,用牙刷刷干净;去头去虾肠,洗干净备用。
  • 2.青蒜和香葱洗干净切段备用;姜和蒜切片,葱头切丝备用。
  • 3.花椒一小把,干辣椒切段备用。
  • 4.甜酱1勺。
  • 5.锅热注油,倒入部分青蒜,香葱,葱头,姜和蒜片一起爆香。
  • 6.再倒入干辣椒,花椒和八角一起翻炒。
  • 7.干辣椒约变色时,放入小龙虾大火爆炒。
  • 8.至虾壳变红时,倒入一勺甜酱继续翻炒上色。
  • 9.依次放入少许白酒炒匀。
  • 10.再放入1勺半的盐一起翻炒。
  • 11.放入一碗水约和龙虾齐平。
  • 12.大火烧开。
  • 13.转小火烧约三分之一汤汁。
  • 14.再放入剩下的青蒜,香葱和蒜片等炒匀。
  • 15.最后大火收汁,盛起装盘即可。
