Steps to make 正宗鲁菜--油焖大虾

  • 1.去虾头,去虾头内的沙包。去虾足,去虾尾。在虾尾第二个外壳处剪开,剪到第四个外壳处,挑出虾线,这样开背煮熟时不会打开。
  • 2.这个是处理完的虾。
  • 3.起锅烧油,油温3成热,下花椒,改小火,炸出花椒香味。把花椒捞出。
  • 4.小火,把下摆放进锅里,慢慢煎出虾油,两面都煎。
  • 5.放入料酒,食盐,放冰糖(冰糖是关键)。放水(一次性放够,不要二次加水),开大火,烧开。
