东北人家,无论是过年还是平时,餐桌上离不开的就是咸菜,在春节餐桌上,大鱼大肉吃多了的时候,一定要配合点小咸菜。现如今,咸菜的价位已经超出了肉的价位了。最受大家欢迎的就是这款韩式辣白菜,因为东北人鲜族人较多,所以制作这种韩式辣白菜,是非常地道的。我每年都要制作好多送给亲戚朋友,这款就是我刚制作好,就拍照的,因为明天它就给远方的朋友邮走了,喜欢的朋友可以自己动手制作一下:

  • 白菜一棵
  • 雪碧200毫升
  • 细辣椒粉100克
  • 粗辣椒粉30克
  • 大蒜一头
  • 虾米10克
  • 苹果一个
  • 白梨一个
  • 白萝卜一段
  • 一块
  • 葱白一段
  • 白酒一勺
  • 白糖一大勺
  • 糯米粉50克
  • 韭菜3根
  • 鱼露8克

Steps to make 【辽宁】东北韩式辣白菜

  • 1.准备一棵白菜(老帮都去除)
  • 2.将白菜斜刀切片,这样吃的时候方便(可以将白菜整个竖着一剖两半)
  • 3.准备其它材料
  • 4.将白菜用适量的盐腌制24小时,然后用手揉,将多余的水分挤压出去(此步骤盐不适合太多,太咸不好吃,自己可以品尝一下,太淡加点盐,太咸用清水洗几遍)
  • 5.糯米粉加适量清水熬成糊状,别太干了。
  • 6.将粗细辣椒粉混合到糯米粉中,拌匀。
  • 7.将糯米粉和白菜混合搅拌匀。
  • 8.将大蒜一头,虾米10克(可多可少,基本就是一小把), 苹果一个去核, 白梨一个去核,白萝卜一小段去皮(和苹果一样大就行),姜一块, 葱白一大段 , 白酒一勺,鱼露,韭菜3根和雪碧(可多可少)一起放搅拌机里搅拌。
  • 9.将搅拌好的所有食材倒白菜中
  • 10.加适量的白糖,拌匀(自己品尝一下,辣度,甜度不够此时自己调节)放密封保鲜盒(无油),发酵24小时之后可以食用。此时酸度不强,想吃酸度大的可以过几天食用。
