抹茶卷
和朋友淘来分的抹茶粉用这个卷卷来开光,这次用的是若竹出来的颜色已经很漂亮了,下次用其他的试试,28*28金色烤盘

  • 砂糖15克(砂糖1)
  • 蜂蜜30克
  • 低筋面粉65克
  • 若竹抹茶粉8克
  • 蛋白160g
  • 牛奶35克
  • 黄油15克
  • 淡奶油160g
  • 砂糖65克(砂糖2)

Steps to make 抹茶卷

  • 1.准备好材料
  • 2.黄油和牛奶混合隔水融化
  • 3.蛋黄加砂糖1打至发白
  • 4.蛋白打起粗泡分三次加入砂糖2打至湿性发泡,像图中一样的弯勾
  • 5.取一般打发的蛋白加入蛋黄糊中,J手法拌匀
  • 6.一次性筛入低筋面粉和抹茶粉,J手法拌匀
  • 7.拌入剩余的蛋白
  • 8.融化的黄油和牛奶延刮刀倒入面糊中拌匀
  • 9.蛋糕糊倒入铺有烤纸的烤盘中,175度烤箱中层15分钟左右,视自家烤箱而订
  • 10.出炉后撕下四周烤纸放凉后撕取背面烤纸,淡奶打发涂在正面中间放芒果丁卷起放冰箱冷藏2小即可
