水果酸奶慕斯
还有十多天就要过年啦~在这里先提前祝大家新春快乐!最近天气渐渐回暖,看到大街上好多卖草莓的,本想着肯定酸,结果一尝,好甜!迫不及待的买了几斤,回家做点儿小甜点呢~

  • 淡奶油50g
  • 酸奶20g
  • 草莓10个
  • 白醋2ml
  • 香草精1g
  • 白糖65g
  • 吉利丁片6g
  • 清水15ml
  • 玉米油15ml

Steps to make 水果酸奶慕斯

  • 1.三个蛋清放入无水无油的盆中,加入白醋,分三次加入40g白糖,打至硬性发泡
  • 2.蛋黄放入碗中,加入香草精

  • 4.充分搅拌均匀
  • 5.筛入藜麦粉和低筋面粉
  • 6.以“Z”字方式搅拌均匀
  • 7.放入三分之一的蛋白
  • 8.翻拌均匀
  • 9.将蛋黄糊倒入剩余的蛋白中
  • 10.继续翻拌均匀
  • 11.倒入8寸的活底蛋糕模具中,磕震掉大气泡
  • 12.预热烤箱,上下火200度,烘烤22分钟左右
  • 13.烤好的蛋糕倒扣自然放凉,并切成三片
  • 14.吉利丁片用凉水泡软
  • 15.放入微波炉中,60度20秒左右(切记温度不超过80度),叮至完全融化
  • 16.淡奶油、酸奶倒入碗中
  • 17.先打发至有大气泡产生,加入25g白糖
  • 18.慢慢分次倒入吉利丁液,打至有纹路产生,不轻易消失的状态即可
  • 19.蛋糕片修剪成比蛋糕模具小一圈的样子(蛋糕模具:8寸活底蛋糕模具)
  • 20.周边摆放好对半切开的草莓
  • 21.倒入淡奶油液
  • 22.再放一片蛋糕,倒入剩余淡奶油
  • 23.放入冰箱,冷藏8小时以上
  • 24.做好以后用吹风机或热毛巾敷一下,即可轻松脱模
  • 25.可以装饰一些巧克力
  • 26.装饰一些水果、威化、糖珠
  • 27.切下来一块儿
  • 28.满满的草莓
