秋后,是鲜姜大量上市的季节,在早市看到顶着娇红头冠、浑身嫩黄的鲜姜,许多人把它们买回家用来腌韭菜花或直接腌鲜姜。民间谚语“饭不香,吃生姜”,说的就是当人胃口不佳、吃饭不香或食量降低时,饭前吃上几片姜,可以开胃健脾,提升饭量。

Steps to make 腌鲜姜

  • 1.要选择这种娇红色头冠、嫩黄色的鲜姜,这种姜新鲜、味道好。把鲜姜清洗干净,晾干水分。
  • 2.准备好生抽、香醋、花椒、大茴、冰糖。
  • 3.把锅烧干,倒入生抽、香醋,再放入花椒、大茴、冰糖开中火煮至沸腾。喜欢吃甜口的,多放点冰糖;喜欢吃酸口的,多放点香醋。我做的生抽和香醋的比例是1比1。
  • 4.鲜姜晾干,放到案板上切成和1元钱一样薄厚的姜片。案板和刀一定要干燥,没有一滴水分。
  • 5.切好的姜片放入盆中,盆子也需要干燥无水分,倒入两匙腌制盐,腌制2小时。
  • 6.姜片腌出了少量水分,用手使劲把姜片攥干水分。
  • 7.把攥干水分的姜片放入玻璃瓶中,玻璃瓶要洗净晾干。为了腌鲜姜专门买了封闭的玻璃瓶。超市搞促销,2个瓶子才花了不到1个瓶子的钱。
  • 8.把熬好的汤汁放到彻底凉凉以后,再倒入瓶中,盖上盖子,放到冰箱里冷藏起来,第二天就可以开吃了。
  • 9.腌好的鲜姜口感鲜嫩、酸甜爽脆,是开胃下饭的绝佳小菜。好吃又营养丰富的鲜姜你不腌起来吗?
