广式豆沙月饼
冷置了10年之久的烤箱开始工作了。
很多时候,我们缺少的就是动手的勇气。
终于下定决心做月饼。
第一炉月饼还算满意,遗憾的是回油后的月饼有点软,不知道问题出在哪里。望过路高手指点一二,先谢谢了*!

  • 普通面粉150g
  • 转化糖浆110g
  • 枧水4g
  • 玉米油40g
  • 奶粉10g
  • 红豆500g
  • 纯净水100g
  • 玉米油20g
  • 白糖50g

Steps to make 广式豆沙月饼

  • 1.转化糖浆110g、枧水4g、玉米油40g,全部放入大碗中,充分搅拌均匀。
  • 2.倒入150g普通面粉。
  • 3.搅拌均匀。
  • 4.叠压成光滑的面团,不要揉搓,放冰箱冷藏一个小时。取出分成16个剂子,每个重20g。
  • 5.红豆泡一个晚上,放入电饭煲中,加水比平时做米饭多一点,按米饭键焖熟,放入搅拌机中,加100g水,打成稀糊,倒入不粘锅中,加20g玉兰油,炒至水份蒸发成硬泥状,晾凉搓成30g的圆球。
  • 6.慢慢挤压包住馅料,滚上面粉,放入50g模具中挤压成月饼状。
  • 7.喷水防裂。
  • 8.这个是用不同的转化糖浆,仅供参考。
  • 9.烤箱上下火200度,预热6分钟。
  • 10.放入烤箱,烤8分钟。
  • 11.仅供参考。
  • 12.8分钟后取出月饼,刷上薄薄的一层蛋黄液。
  • 13.薄薄的刷上蛋黄液。
  • 14.刷蛋黄液。
  • 15.再次放入烤箱中,上下火175度烤15分钟。
  • 16.成品。
