Steps to make 豆沙蛋黄月饼

  • 1.咸蛋黄表面喷高度白酒,放入烤箱烘烤5分钟。
  • 2.红豆沙准备一点。
  • 3.将豆沙压扁蛋黄放在中间,将豆沙包裹住蛋黄,滚圆。馅料做好备用。
  • 4.将转化糖浆、色拉油倒入面包机内,加入枧水,加入面粉。
  • 5.用刮刀搅拌均匀。
  • 6.包上保鲜膜静置2-3个小时。
  • 7.将饼皮分好为52克。(馅为30克,每个月饼重量都在82克。取一个饼皮面团,在手掌上压扁,把馅料放在面团中间,用手把饼皮慢慢上推至包裹住馅料收口。
  • 8.在模具里均匀的撒上面粉,转几下再倒出多余的粉,然后放入月饼坯。轻轻按下后,压出月饼花纹,轻轻提起月饼模子。
  • 9.这时候,烤箱开始预热了。烤箱200度预热后。放入烤盘,月饼表面喷上少许的清水。放入烤箱上下火170度烘烤10分钟。
  • 10.然后取出来,取一个鸡蛋,去掉一半的蛋白,在加入15克清水调均匀,过滤一下,表面用羊毛刷子,刷一层鸡蛋液,这样更均匀。
  • 11.上下火180度,中层烤制15分钟。
  • 12.取出来,成品图。
