云腿月饼

  • 云南火腿250g
  • 熟中筋面粉100g
  • 白砂糖30g
  • 蜂蜜70g
  • 猪油60g
  • 白芝麻20g
  • 咸蛋黄10颗
  • 中筋面粉320g
  • 黄油60g
  • 猪油40g
  • 玉米油40g
  • 50g
  • 2g
  • 蜂蜜30g
  • 白砂糖30g
  • 蛋清30g

Steps to make 云腿月饼

  • 1.取出云腿。
  • 2.切掉皮。
  • 3.切成稍微有点厚度的片。
  • 4.焯水,去掉咸味。
  • 5.切成小丁。
  • 6.蒸20分钟。
  • 7.加白砂糖,蜂蜜腌一下,有些教程会说腌过夜,我认为可以不用,腌个一两小时就好,因为腌太久肉会容易干。
  • 8.面粉用100g,可以称115g这样去炒,因为炒好你会发现差不多熟的就100g这样。
  • 9.猪油,白芝麻,熟面粉放到火腿中揉匀。
  • 10.分成25g跟15g一个的小剂子,15g的是用来包咸蛋黄云腿的。放冰箱冷藏。
  • 11.馅料冷藏的时候准备冰皮,把面粉,蛋清以外的材料混合,可以微波炉叮高火一分钟,黄油猪油融化就好,充分搅拌乳化。
  • 12.凉后加鸡蛋清,没有也可以不加。
  • 13.搅拌机把混合液倒入面粉搅拌。
  • 14.揉成面团醒面40分钟。
  • 15.醒好的面团变光滑。
  • 16.35g皮包25g馅。
  • 17.加蛋黄的可以这样包,也可以把云腿馅包裹蛋黄后搓成球,再包。
  • 18.比如这样,把蛋黄包起来,就像包蛋黄酥,广式月饼等内馅一样。
  • 19.印上印花。
  • 20.印了好几个花纹,200度中层上下火,烤20分钟。
