椰浆戚风蛋糕
这款椰浆戚风真的是用实打实的椰浆做的。买了两个椰青,椰汁喝了,破开椰壳,将其中的白肉取出,用料理机打成细细的浆,当成液体使用,做出了这款中空戚风。风味很独特,而且能够废物利用,我觉得很有成就感。

  • 蛋白5个
  • 蛋白用白糖70克
  • 蛋黄5个
  • 蛋黄用绵白糖20克
  • 玉米油40克

Steps to make 椰浆戚风蛋糕

  • 1.白色的椰肉从椰壳中用勺子挖出
  • 2.入料理机中打成细腻的椰浆
  • 3.像奶油一样细腻
  • 4.取180克椰浆,与玉米油同入一盆
  • 5.充分混合均匀
  • 6.加入5个蛋黄
  • 7.搅拌均匀后,加入20克绵白糖,混合均匀
  • 8.筛入蛋糕粉
  • 9.混合均匀,无干粉颗粒,此为蛋黄糊,放一旁备用
  • 10.蛋清入无油无水的盆中,用电动打蛋器低速打出粗泡时,放入20克绵白糖,待打到白色细腻发泡时,放入20克绵白糖,出现明显纹路时,放入剩下的30克绵白糖
  • 11.提起打蛋器,蛋白呈现短小的尖尖,蛋白糊打发完毕
  • 12.此时预热烤箱,180度,然后取三分之一蛋白糊入蛋黄糊中,翻拌均匀
  • 13.将混合好的蛋糊倒回到蛋白糊盆中
  • 14.翻拌均匀
  • 15.将蛋糕糊倒入8寸中空模具中,轻震几下,震出大的气泡
  • 16.送入预热好的烤箱中,使模具处于烤箱中间位置,180度,上下火,45分钟,中途上色过深时,可迅速打开箱门,盖上一层锡纸
  • 17.出炉,轻震几下,震出多余的空气
  • 18.取一个合适的酒瓶子,将中空的烟囱插入到瓶子上,自然晾凉后再脱模
  • 19.外表的颜色略深了一些,但是看着还不错
  • 20.尽管有些大气泡,但总的来说还不错。自己创的方子,也还算满意
