  • 蛋黄10个
  • 鸡蛋1个

Steps to make 莲蓉蛋黄月饼

  • 1.把皮料全部放入碗中拌匀。
  • 2.用保鲜膜盖好、放置3小时、时间不能超过3小时或过短。
  • 3.咸鸭蛋黄用白酒泡起、或者烤的时候喷酒。
  • 4.放入烤盘中。
  • 5.上下火180度烤8分钟凉后用。
  • 6.50克一个月饼、皮分成15克一个、馅儿35g、皮和馅比例3:7也可以2:8。
  • 7.把咸蛋黄、莲蓉包起来。用虎口慢慢地、往上推。35g(某宝买的)。
  • 8.把皮也这样包法、包紧了。
  • 9.包好后放入玉米粉中滚一下。
  • 10.模具也拍点粉、装入。
  • 11.压出。
  • 12.多种花纹。
  • 13.由于只包了10个蛋黄的、剩下的包的豆沙馅的、家人也喜欢吃。
  • 14.为了好区分开来,用了四方形的模具。
  • 15.做好所有的、入盘中。
  • 16.喷水雾。
  • 17.入烤箱中层180度、先烤8分钟。
  • 18.取出刷蛋黄液、一个鸡蛋、去掉一半的蛋白、加入15克水调匀、过滤一下、不要多刷、会糊的.用羊毛刷、更均匀。
  • 19.入烤箱再烤15分钟左右、上色可以、馅儿都是熟的。
  • 20.太香了。
  • 21.烤出来的月饼很硬、凉后装袋密封、等2–3天回油食用。
