鲜艳的蔓越莓最终变成黑乎乎的馅料,没了最初的艳丽
吃在嘴里,却依然酸酸甜甜,似乎用多少糖也解不掉那酸。。。。

  • 低筋粉128克
  • 转化糖浆102克
  • 花生油37克
  • 碱水1.7克
  • 蔓越莓月饼馅420克

Steps to make 蔓越莓月饼

  • 1.用料:低筋粉128克,转化糖浆102克,花生油37克,碱水1.7克,蔓越莓月饼馅420克。
  • 2.将碱水倒入转化糖浆,搅拌均匀。
  • 3.加入油,搅拌均匀。
  • 4.倒入面粉。
  • 5.拌成均匀面团,包上保鲜膜,松弛半小时。
  • 6.将皮馅分别分割成14等分。
  • 7.取一块饼皮,按扁,放入馅料。
  • 8.将饼皮向上推起,包好,收口。
  • 9.逐个做好,搓圆。
  • 10.放入撒粉的模具中。
  • 11.扣在案台上,向下压实。
  • 12.提起模具,轻轻脱模。
  • 13.摆入烤盘中,表面喷水,放入预热好的烤箱,中层,上火200度,下火170度,烤约5分钟,
  • 14.定型后取出,表面刷蛋液。再次放回烤箱中,烤约15分钟左右。
  • 15.表面金黄,出炉。
