  • 蛋黄液20g
  • 杏仁粉10g
  • 牛奶60g
  • 柠檬汁2g
  • 玉米淀粉10g
  • 糖粉55g

  • 1.黄油室温软化,切成小块,和糖粉一起放在盆里。
  • 2.用电动打蛋器打发至颜色发白,分两次加入蛋黄液,每次搅打到完全看不到蛋黄液再加下一次。
  • 3.一次性筛入低筋面粉和杏仁粉。
  • 4.用刮刀压拌混合均匀。
  • 5.手捏成团,装保鲜袋送入冰箱冷藏半个小时。
  • 6.面团取出,上下垫上油纸,把面团擀成比派盘大一圈的薄片。
  • 7.把派皮平铺在7寸派盘上,多余的部分用刀切掉,然后用叉子在饼皮底部扎一些小孔。
  • 8.垫上油纸,放上烘焙重石,送入预热好的烤箱。
  • 9.上下火180度烤10分钟。
  • 10.开始制作乳酪夹心,100克奶油奶酪软化,加25克糖粉。
  • 11.搅打至顺滑无颗粒。
  • 12.加入70克淡奶油和60克牛奶,加上2克柠檬汁。
  • 13.搅拌均匀,加10克玉米淀粉混匀。
  • 14.倒入派盘中。
  • 15.送入烤箱,160度烤45分钟。
  • 16.取出完全晾凉,抹上一层草莓果酱。
  • 17.淡奶油加糖粉打发。
  • 18.装入裱花袋,挤在派皮上,中间部分再次涂上草莓果酱。
  • 19.继续挤上奶油,草莓洗净擦干、对半切开,摆在上面。
  • 20.用裱花嘴挤上花纹。
  • 21.撒上防潮糖粉,点缀薄荷叶或迷迭香做装饰。
