中种豆沙小面包
喜欢用中种法来做面包,相对直接法面包内部组织更细腻蓬松,而且存放两天也依然松软,这个方子是在静心莲那里看到的,我把糖油的含量稍微减了一点。里面夹入了豆沙馅,小孩子很喜欢!

  • 高筋面粉175g
  • 酵母1小勺
  • 白糖10g
  • 100g
  • 高筋面粉50g
  • 低筋面粉25g
  • 奶粉10g
  • 淡奶油22g
  • 鸡蛋液35g
  • 白糖35g
  • 3g
  • 黄油20g

Steps to make 中种豆沙小面包

  • 1.将中种面团材料(高筋面粉175g,水100g,酵母1小勺,糖10g)混合搅拌
  • 2.揉成面团后,放入冰箱冷藏一晚上发酵至2-3倍大
  • 3.主面团材料(高筋面粉50g,低筋面粉25g,淡奶油22g,白糖35g,奶粉10g,盐3g,鸡蛋液35g)除黄油外其它材料混合
  • 4.将发好的中种面团撕成小块也放入一起,搅拌面团
  • 5.搅拌成光滑面团后,加入黄油搅拌至扩展阶段
  • 6.搅好的面团揉圆
  • 7.盖保鲜膜室温发酵40分钟
  • 8.然后将面团取出揉匀排气,分成50g一个的小份
  • 9.将每一份揉圆松弛15分钟,把豆沙馅也分好
  • 10.松驰好的小圆面团擀成圆形,放入豆沙馅
  • 11.包起来,口子收紧朝下放
  • 12.所有的做好放烤盘上
  • 13.盖保鲜膜再次发酵,发到约2倍大,然后刷上一层鸡蛋液
  • 14.中间撒上黑芝麻
  • 15.放入预热好的烤箱中层,180度,16分钟左右
  • 16.烤好后取出晾凉
