抻面
这种面的做法是跟同事学的。煮出来的面很筋道,咬一口,稍有点硬,但有嚼头,煮熟后,过凉开水,拌上自己喜欢的卤子,那绝对是好吃没得说。我这里只拍了抻面的做法,卤子随大家喜好了,自己搭配吧。。。

Steps to make 抻面

  • 1.原料:面粉、盐和小苏打。
  • 2.将三种原料混合在一起,加水。水要一点点的加,这样才好掌握面的软硬度。先用筷子搅拌成雪花状,
  • 3.再用手使劲按揉成光滑、柔软的面团。盖上盖,放置一旁饧制大约30分钟。
  • 4.30分钟后,面团已经变得柔软而有弹性了,分几次再用手蘸少量水,使劲揉面团,面团在手里的感觉是越来越柔软,但有弹性。面团变得更光滑了,用手指按压面团,面团的凹处,能很快的恢复,再放置一旁饧制30分钟左右。
  • 5.30分钟后,面团已经很软了,但筋性也比较大了。
  • 6.撒少许布面,将面团移到面板上,擀成长条形或椭圆形。
  • 7.切成粗一点的条状,如果会拉面的话,这时候就可以拉面了。我不会拉,所以用更笨一点的方法,先切条,再用手搓圆形。
  • 8.放在盆里,刷上油,再饧一会儿,刷油的目的是防止面片粘连,二是为了让面条更筋道,如果容器大,可以隔开一小段距离放置。
  • 9.开火,锅内烧开水,取出一段面条坯,两手抓住两头,两手同时上下抖动,并同时向外拉伸,拉到自己喜欢的长度和宽度,就可以放锅里煮了,当面条浮起时,再煮一会儿,就可以盛出过凉开水了。下面的事,,,大家都知道的。。。。呵呵。
