Steps to make 给寒冬增温—豉香腐竹鱼头煲

  • 1.腐竹提前用冷水泡软。
  • 2.腐竹切成2厘米长的段;青红椒、洋葱各切小块;下青菜洗净备用。
  • 3.鱼头对剖成两半,加入料酒腌制10分钟。
  • 4.起油锅烧热,将腌好的鱼头薄薄的裹上一层干淀粉,放入锅中煎至两面金黄盛出。
  • 5.原锅留油,下葱姜蒜炝锅。
  • 6.下腐竹和洋葱翻炒均匀。
  • 7.加入豆豉、生抽、老抽、少许料酒炒匀。
  • 8.倒入清水、盐、糖、鱼头,大火煮滚,转小火炖15分钟。
  • 9.将炖好的腐竹鱼头倒入砂锅中,再放入青红椒块、小青菜,再煮2-3分钟,加入少许鸡精调味即可。
