达克瓦兹
网上看到后,学做的达克瓦兹是一款很经典的日式口味小甜饼,完全不需要放面粉,我觉得味道上和经典的马卡龙略有点相似,用蛋白打发,加杏仁粉填充加固组织,烤完既有蛋白饼干的甜和蓬松,又有杏仁的香味!

  • 蛋清200克
  • 砂糖30克

Steps to make 达克瓦兹

  • 1.杏仁粉过筛
  • 2.糖粉过筛
  • 3.这是过筛后的杏仁粉和糖粉备用
  • 4.蛋清分离出来放入盆里加一点点盐
  • 5.砂糖分3次加入打发蛋清
  • 6.把蛋清打发至干性发泡的蛋白霜
  • 7.把杏仁粉糖粉加入打发好的蛋白霜里
  • 8.用翻拌的手法拌匀
  • 9.把粉糊装入带有圆裱花嘴的裱花袋里
  • 10.挤出一个个小圆形
  • 11.在上面撒上糖粉,等1分钟再撒一次
  • 12.烤箱预热,160度烤20分钟
  • 13.巧克力融化装入裱花袋,等小饼冷却后取一片挤上巧克力酱
  • 14.再压上另一片即可
