Steps to make 菠萝咕噜虾

  • 1.准备材料
  • 2.菠萝剖开,一半取肉切好后,用淡盐水浸泡备用
  • 3.鲜虾去头壳,虾线,留尾部从背部剖开,用盐、生抽少许和胡椒粉腌制后,将虾放入用蛋清调和的淀粉糊中,抓匀上浆
  • 4.将虾裹上面包糠
  • 5.虾用七成热油炸制,卷曲变色即可,沥油备用
  • 6.另一半菠萝榨汁后倒入锅中,同时倒入适量清水
  • 7.将锅中加入适量盐、糖、白醋、少许朗姆酒、烧至冒泡,加入水淀粉,烧至稍稍黏稠
  • 8.放入切好的菠萝片和炸好的虾球迅速翻炒至均匀挂上芡汁
  • 9.起锅装盘,将锅中汤汁浇到菜品上即可
