在餐馆吃了一次虎皮凤爪后念念不忘,自己在家复刻一下。
口味八成相似吧,还蛮好吃的。
但是实在不适合家庭制作,餐厅虽然贵些,但完全抵过麻烦的做法。

Steps to make 虎皮凤爪

  • 1.鸡爪剪去指甲尖,洗干净。
  • 2.焯水,洗干净浮沫。
  • 3.下热油锅炸到外表显得干枯焦黄。
  • 4.趁热泡冷水一小时,直到表皮膨胀褶皱。
  • 5.海鲜酱、柱候酱和蚝油,1:1:1混合,用热油爆香。
  • 6.加些家中常备的香料,倒热水煮开,按自己口味加些糖盐调味。
  • 7.把泡好的鸡爪放入,大火烧开,小火焖煮45分钟左右。
  • 8.最后大火稍微收汁,就完成了。
