Steps to make 炒米粉

  • 1.米粉用冷水泡软。
  • 2.芹菜、胡萝卜、小油菜洗净,芹菜斜刀切段,胡萝卜削皮切丝,火腿肠切片。
  • 3.鸡蛋打入碗中加少许盐搅拌均匀增加底,另一碗中加入生抽、老抽、蚝油、盐、鸡精和少量水,搅拌均匀。
  • 4.锅中倒入食用油烧热,倒入蛋液炒散,盛出备用。
  • 5.锅中再倒入食用油烧热,放入葱蒜末和小米椒段,炒出香味。
  • 6.倒入芹菜、胡萝卜丝、火腿肠翻炒2分钟左右。
  • 7.放入米粉,加入料汁,再放入油菜和炒好的鸡蛋。
  • 8.继续翻炒均匀,不停搅拌炒至油菜断生。
  • 9.盛入盘中。
