喜欢腌一点小菜:简单、实惠、用来下饭,就酒、就算是正餐也可以有。腌渍小菜是很简单的事情,食材和调料也可以随意搭配,口味和口感也是很自由的。

今天用白糖、酱油来腌渍黄瓜,里面添加了青尖椒,这样腌渍出的酱黄瓜的味道是“酸辣”的。因为黄瓜提前用盐腌出了部分水分,腌出的酱黄瓜口感是爽脆的。
辣酱黄瓜,其实应该是叫“酸辣酱黄瓜”才好。因为这次做的酱黄瓜与以往做的几次不同:材料里面增加了白糖。这样在腌渍的过程中会有个发酵的过程,这样腌渍的黄瓜就是酸脆味道的了。

    Steps to make 辣酱黄瓜

    • 1.黄瓜、青尖椒洗净晾干水份。
    • 2.黄瓜剖开,切段备用。
    • 3.把小黄瓜码到干净无水的盆里,洒入精盐。
    • 4.码入剖开的黄瓜片,同样撒入精盐,腌渍24小时后倒出水份。
    • 5.青尖椒晾干,切片后放入盛有黄瓜的小盆内。
    • 6.锅里倒入酱油,量一没过腌渍的蔬菜为准。
    • 7.倒入适量的白糖。
    • 8.放入八角、桂皮大火煮开,晾凉。
    • 9.生姜、大蒜切薄片放入盛有黄瓜的小盆内拌匀。
    • 10.另起油锅,把油烧热。
    • 11.把油倒入晾凉的酱油汤汁中。
    • 12.把晾好的料汁倒入码有黄瓜的盆内(腌渍一周即可食用)。
