芸豆沙馅传统月饼
终于把月饼做出来了,真是不容易。月饼上刻着自己的名字,看上去挺好玩的,就是昵称起的太复杂,烤熟后,有点看不清复杂的字了,以后叫一一最简单了,哈哈。
虽然不够完美,但是自我感觉已经非常良好了。图片拍了两回,回油前(晚上)和半回油后(早上)。
明儿就中秋了,大家玩好。最后祝大家中秋愉快,团团圆圆。
回油前的月饼,颜色不够亮丽,但朴实无华,其实看上去也不错哈。

  • 低筋面粉130克
  • 白芸豆沙250克
  • 熟粉100克
  • 转化糖浆85克
  • 枧水2克(碱:水=1:4)
  • 色拉油30克

Steps to make 芸豆沙馅传统月饼

  • 1.准备材料。
  • 2.称量好转化糖浆。
  • 3.10克碱加入40克水。(用不完)
  • 4.碱水调匀。
  • 5.糖浆里加入2克碱水。
  • 6.分次加入色拉油。每一次都调匀后再加下一次,一共30克油。
  • 7.调匀后的糖浆变成浓褐色粘稠液体。
  • 8.筛入低筋面粉。
  • 9.用刮刀搅拌均匀。
  • 10.搅匀后的样子,即成月饼皮。盖保鲜膜放冰箱冷藏1小时。
  • 11.取250克白芸豆沙馅。
  • 12.加入100克熟粉搅拌均匀。
  • 13.拌好的月饼馅。
  • 14.取出冷藏好的月饼皮。
  • 15.取15克月饼皮,揉圆。
  • 16.取50克月饼馅,揉圆。
  • 17.手上沾熟粉,包裹月饼。
  • 18.包好的月饼。
  • 19.用月饼模压出自己喜欢的图案。
  • 20.压好的月饼,表面喷少量水。
  • 21.烤箱预热180度,中层放入月饼。
  • 22.5分钟后,表面微微上色后取出。
  • 23.略凉时,表面刷蛋液。
  • 24.再次入烤箱,180度10分钟左右。
