  • 1.准备好的青鱼中段。
  • 2.从鱼背中间剖开,再切成2-3厘米的厚片。
  • 3.除青鱼以外的所有配料加大约1升的水煮开,再小火炖十分钟。
  • 4.过滤出汤汁待用。
  • 5.热锅凉油,待油温稍微高点就可以把鱼块放进。小火慢炸,千万不要翻动,否则全部会碎掉。
  • 6.炸到鱼身金黄,基本就定型了,才可以翻动。
  • 7.捞出放凉,吃的时候再大火炸一遍。
  • 8.大火炸好再直接放进烧好的卤汁中泡上十分钟就可以。
  • 9.泡的时间短点,熏鱼口感外脆里嫩,泡时间长点更入味,而且会有点嚼劲。
