霉干菜烧鲳鱼

    Steps to make 霉干菜烧鲳鱼

    • 1.把鲳鱼去鳞和鳍、嘴巴和内脏并洗净,然后切成麻将块状备用。
    • 2.霉干菜提前用水泡发半个小时洗一下(霉干菜是小姨自己做的,很干净)。
    • 3.热锅下油,放入姜沫,爆香。
    • 4.然后放入鲳鱼,稍微的用油煸煎一下。
    • 5.在锅里淋入适量的料酒,翻动下鲳鱼。
    • 6.然后在上面铺上霉干菜,加老抽,生抽调色,放入适量的红糖,和盐(盐可以根据霉干菜本身的咸味来控制)。
    • 7.接着加水,水要没过菜。
    • 8.开大火烧开后转中小火闷煮5分钟,接着加入红辣椒翻动一下,继续闷煮。
    • 9.等到水快干时开大火收一下汁,加鸡精调味,出锅前撒上葱花。
