台州人吃的“冬至圆”有两种,有甜、咸之分,咸馅的已经发过菜谱,今天继续跟大家分享甜的“冬至圆”,也叫“擂圆”“擂灰圆”。黄豆炒熟磨成豆粉,加入红糖、芝麻、桂花等拌匀备用;糯米粉和温水揉成粉团,做成带馅或不带馅的汤圆,入沸水煮熟捞起,放入拌好的红糖黄豆粉中滚一圈,擂圆就做好了。“擂”在当地方言中是滚来滚去的意思,所以冬至圆起名叫“擂圆”,也借此取圆圆润润、团圆之意。

    Steps to make 擂灰圆

    • 1.糯米粉放入大碗,分次倒入开水,边倒边搅拌成无干粉,再将拌好的粉揉成光滑面团,盖盖饧发20分钟。
    • 2.自制的桂花红豆沙。
    • 3.揪小块粉团搓圆按扁,取适量豆沙放入。
    • 4.收好口,放在手掌中搓圆。
    • 5.炒好磨细的黄豆粉、黑芝麻和红糖拌匀。
    • 6.锅中放水烧开,放入汤圆,大火烧开后转小火烧煮,中途点两次冷水,待汤圆全部浮起即是熟了。
    • 7.捞出。
    • 8.放到拌好的红糖黄豆芝麻粉内滚一圈。
    • 9.软糯的口感,和着黄豆粉、芝麻的浓香,还有红糖的香甜,这就是幸福的滋味。
