这个辣白菜菜谱是经过我多年无数次改良的成果,也经过了无数网友们制作,味道口碑相当不错。
图片是多次制作从中选出来的步骤图,以前我用葱,白萝卜,韭菜作为配料,现在替代的比较正宗的洋葱,如果喜欢葱,白萝卜和韭菜的,大家可以自己替换。

  • 鱼露小半碗

  • 虾酱50g
  • 味精4匙

  • 苹果3个
  • 腌渍盐一袋
  • 圆葱4个
  • 糖浆小半碗
  • 精盐8匙
  • 白糖250g
  • 糯米粉200g

Steps to make 辣白菜精华版

  • 1.市场买回来的白菜,黄心的最好。洗干净切开两半。
  • 2.将白菜对半切开备用。
  • 3.将白菜逐层撒腌渍盐后,放入容器中,加两斤水。腌制(没过表面),放一夜。(期间可以翻转白菜均匀腌制)
  • 4.第二天白菜软了后,拿出沥干水分。
  • 5.锅内加糯米粉和比糯米粉多一倍的清水,搅拌均匀后,加热,加热期间要不停的搅拌看着锅,待成浆糊后关火,晾凉。
  • 6.把苹果,梨,洋葱,姜,蒜放入搅拌机搅碎。
  • 7.加入所有调料搅拌均匀。
  • 8.带上手套,逐层涂抹辣椒酱。(以白菜帮为重点,叶子一带而过)
  • 9.将白菜留出一片,从叶到根部卷起,用留出那叶绑住白菜。(留出的叶子不要扯下来,要连着白菜)
  • 10.全部抹完后,密封阴凉处存放,密封五天即可食用。
