  • 鸡蛋65g
  • 糖粉79g
  • 转化糖浆33g
  • 五仁馅料1包
  • 小苏打1.5g
  • 泡打粉1.5g
  • 臭粉1g

Steps to make 蛋烧月饼

  • 1.准备好全部食材,黄油室温软化。
  • 2.低筋面粉跟高筋面粉过筛后直接在揉面垫上简单拌匀,加入苏打粉、泡打粉跟臭粉,拌匀。(没有臭粉可忽略)
  • 3.混合拌匀后,在面粉中间开个大天窗。
  • 4.把软化好的黄油跟糖粉到在面粉中间,带上pvc手套抓匀。
  • 5.再依次加入蛋液、转化糖浆,再次抓匀。
  • 6.将混合好的面粉跟油糖混合在一起,反复折压成面团。
  • 7.把面团分成小剂子,皮40g、馅料30g。(馅料最好提前分好备用)
  • 8.把面皮搓圆、压扁,包住馅料收拢滚圆。
  • 9.放入玛芬模具中,用月饼模具的花片压扁印出花纹。(花纹建议不要太密集复杂的比较好)
  • 10.准备一个鸡蛋,加入一滴油、一丢丢的盐,搅打顺滑,最好过筛一下,让蛋液更佳细腻顺滑,然后用羊毛刷沾上少许蛋液,轻轻且快速的在月饼表面刷两下。
  • 11.烤箱上火200℃下火170℃预热最少十分钟,把模具放入烤制13-15分钟。
  • 12.出炉后转移到晾晒网上晾凉,等待回油后即可食用。
