客家美食【青椒酿】
所谓酿菜,就是将一种或者几种食材做成馅料,填入另一种食材中,再加以烹制的一种方法。酿菜在客家菜系中最为常见,而酿豆腐、酿茄子、酿苦瓜则被称为“煎酿三宝”。在客家酿菜为代表性菜肴。

传说与客家人从中原南迁饮食习惯改变有关,是饺子情节造就了客家酿菜。酿就是把类似饺子馅料的馅娘进豆腐等主料里。由于客家人对酿情有独钟,把其他包进去的菜式也叫酿,做出来的菜肴,菜的清香和肉融为一体,味道诱人。

Steps to make 客家美食【青椒酿】

  • 1.1、 猪肉切块,加入蒜、盐巴剁成肉糜,期间加少许玉米淀粉一起搅拌均匀。
  • 2.2、 辣椒洗净,去蒂,去籽,从中间切一口子,不要切断
  • 3.把剁好的猪肉馅填入辣椒。
  • 4.锅里放少许油,放入酿好的辣椒,小火慢慢煎制,直到辣椒微黄,起皱为宜。加入少量清水,小火慢炖10分钟,另起一油锅,放入蒜蓉、葱白,小辣椒煸香后,加少许玉米淀粉勾芡淋上即可。
