中种馒头
这是我第一次尝试着做中种馒头,做法很另类,口感像面包,松软可口

Steps to make 中种馒头

  • 1.准备好所有食材
  • 2.把酵母倒入温牛奶中,搅拌均匀至融化或者静置10分钟
  • 3.把刚刚有融入酵母的牛奶倒入120克面粉里,搅拌均匀
  • 4.这是搅拌好的面粉
  • 5.用保鲜袋把搅拌好的面粉扎紧,或者用保鲜膜盖住也可以
  • 6.在锅里倒入开水
  • 7.把面碗放入锅内,发酵一个小时,中间换一次开水(或者放在温暖处发酵)具体要看气温决定发发酵时间
  • 8.这是发好的面粉,有原来的两倍大了,呈蜂窝状
  • 9.把发现酵好的面粉倒入一只大一点的盆里,接着把另外80克面粉倒入,搅拌均匀。如果揉到最后有点粘手,可以边揉边加一点干面粉,直到软度适中,不沾手为止
  • 10.这是揉成好的面团
  • 11.把面团搓成长条,平均分成10只挤子,每只36克。搓圆
  • 12.这是10只搓圆的面团
  • 13.蒸锅下层加入开水,把面团放入蒸锅,盖上盖,醒发20分钟
  • 14.这是醒发好的面团
  • 15.锅内放入热水,开火蒸18分钟,蒸好后,焖5分钟,出锅
  • 16.出锅了窝
