绿豆糕
小时候,乡愁是一块小小的绿豆糕,我在这头,家在那头。
如果说绿豆糕代表的是一种家乡的味道,那每次吃绿豆糕,就是一种对故乡的眷恋吧。绿豆糕是中国的传统甜品,虽然南北方的绿豆糕有些差异,但是几乎没有人会太排斥它,那种酥软入口即化的清甜感,吃到嘴里都会感觉整个身心都清凉凉的。绿豆性寒,对于夏季清热解毒来说再适合不过,因此每年夏天,吃绿豆糕的风潮就被掀起。在这个吃什么都感觉腻歪的季节里,如果你实在没有食欲,可以吃几块绿豆糕去去火,抚慰一下燥热的肠胃吧。

  • 麻油40克
  • 麦芽糖20克
  • 馅料245克
  • 细砂糖50克

Steps to make 绿豆糕

  • 1.绿豆糕材料(3个100克的,5个50克的)绿豆:100克、麻油:40克、细砂糖:50克、麦芽糖:20克、馅料:245克
  • 2.制作过程:1.绿豆提前一天浸泡
  • 3.2.泡好的绿豆去皮(去皮过程有点麻烦,可以买去皮绿豆方便点)
  • 4.3.去皮后的绿豆盖上保鲜膜放锅里蒸
  • 5.4.蒸至用勺子能轻松把绿豆压成泥状即可
  • 6.5.把熟绿豆捣碎或倒在稍大孔点的筛子里碾压过筛出绿豆泥
  • 7.6.不粘锅里倒入麻油烧热
  • 8.7.倒入绿豆泥小火拌炒均匀
  • 9.8.再倒入细砂糖和麦芽糖继续小火炒
  • 10.9.炒拌均匀时糊状的,小火不停的炒拌防止焦底
  • 11.10.炒拌成一个不粘锅的团状离火,放凉即可
  • 12.11.将馅料分为40克3个,25克5个,绿豆面也分为60克3个,25克5个,都搓成圆球
  • 13.12.将绿豆面放手心,用力按扁,中间放上馅料
  • 14.13.小心均匀的将绿豆面包裹好馅料成圆球状
  • 15.14.模具花片先粘点熟粉,磕掉多余粉,包好馅的球状放入模具,向下按压模具压出造型
  • 16.15.再轻轻的推出绿豆糕即可
