Steps to make 芥末墩儿

  • 1.准备食材。
  • 2.先把白菜摘去老帮,嫩帮的部位用刀切三段儿,大约5-6厘米一段儿。
  • 3.然后把切好的白菜段用棉线绳捆扎起来,避免在烫和腌制的时候散开,要保持整齐才行。
  • 4.锅中的水烧开放入15克盐,用开水先烫几片散开的白菜帮放在容器底部垫底,趁热撒上芥末粉和适量的白糖。
  • 5.切好的白菜段放入开水中烫1-2分钟。
  • 6.烫好的白菜段。
  • 7.整齐的码放进容器里铺好白菜帮的上面,趁热再撒上一层芥末粉。
  • 8.撒好芥末粉后再撒一层白糖。
  • 9.在撒好芥末的白菜段上盖上一层烫过的白菜帮。
  • 10.最后一层趁热撒上芥末粉和白糖。
  • 11.用保鲜膜包后,放到室内的温暖处,发酵7-10天,待白菜酸后便可食用。
