Steps to make 可爱的小小猪头月饼

  • 1.转化糖浆做法:用不锈钢奶锅 ,中火煮白糖和水,至白糖溶化。加入柠檬汁煮至沸腾后不要搅拌,转成小火,约熬40-50分钟,至琥珀色,勉强可流动的浓稠状态,静置一晚,第二天便可用。
  • 2.芋头放锅内蒸熟,捣成蓉泥状。
  • 3.将芋泥放入不锈钢锅内,加入花生油和糖炒开,约5分钟,至可以成团状态时,放凉过筛。
  • 4.芝麻蓉做法:分别将芝麻和糯米粉炒熟。把炒熟的芝麻、椰蓉、糖冬瓜用搅拌机打碎。
  • 5.糯米粉加入水揉成团,混入步骤一的材料中,加入花生油。
  • 6.把步骤二与步骤三的材料混合,揉至可以捏成团即可。
  • 7.皮料做法:将低粉筛入转化糖浆内,稍稍搅拌均匀,加入花生油和枧水,揉和均匀,约揉10-15分钟,包上保鲜膜,放入冷藏2-4小时醒发。
  • 8.小猪月饼做法:把模内撒上一层糯米粉,敲掉多余的粉。
  • 9.把皮料擀开,放在模子上,用筷子轻压小猪耳朵跟鼻子的位置,使皮料更贴合模子。
  • 10.包入馅料,并用筷子较粗的那段轻压馅料,让馅料更饱满。
  • 11.把周围多余的皮包上。
  • 12.把模子翻转,轻轻的压一压鼻子的位置,小心的把月饼反出来。此步骤必须非常小心,因为一下子大力,小猪便会歪脸哦~!
  • 13.180度,烤5分钟,取出刷蛋液,170度,继续烤10分钟即可。
  • 14.做好的月饼,放入高压锅里面,盖上盖子,放一晚上回油。
