我们家那小子最爱吃咸鸭蛋黄了,正好冰箱还剩下最后10来个小咸蛋黄和自己熬的转化糖浆,趁着有空俺也做了一些蛋黄月饼;只是蛋黄小了些,味道还是很不错,就等着儿子回来一起品尝哈~~~

  • 枧水3克
  • 葵花籽油30克
  • 转化糖浆110克
  • 低筋面粉160克
  • 咸蛋黄11个
  • 红豆沙600克

  • 1.准备好所有食材
  • 2.盆中倒入:枧水、葵花籽油和转化糖浆
  • 3.拌匀后倒入低筋面粉
  • 4.先拌匀再轻揉成团,后静置1个小时
  • 5.此时将鸭蛋黄在白酒中滚一圈后烤箱预热150度、中层烤8分钟取出晾凉
  • 6.将蛋黄、豆沙合起秤重35克/份,再将豆沙压扁放上蛋黄
  • 7.包圆
  • 8.做好11份有咸蛋黄,另9份全豆沙:35克/份备用
  • 9.将静置好的面团按15克/份,取一份压扁放上豆沙球
  • 10.借助虎口一手轻轻按压一边轻轻上推
  • 11.将豆沙全部包圆后再轻轻揉圆
  • 12.在面粉里滚一圈拍一拍留少许干粉
  • 13.光面朝里放入模具中
  • 14.然后轻推月饼模顶部再提起,一个月饼坯就压出来了
  • 15.依次做好其它的,进烤箱前喷少许清水以防表面开裂
  • 16.送入预热好的烤箱中层:烤至5分钟定型
  • 17.取出刷层蛋黄+少许蛋白混合液
  • 18.再送入烤箱:200度上下火,继续烤20分钟左右
  • 19.取出烤盘
  • 20.待1~2天回油后即可食用了
