草莓巧克力慕斯蛋糕

Steps to make 草莓巧克力慕斯蛋糕

  • 1.成品图。
  • 2.蛋糕坯制作,玉米油牛奶搅拌乳化,加入过筛低粉翻拌均匀。
  • 3.鸡蛋5个,蛋清蛋黄分离,5个蛋黄翻拌均匀。
  • 4.蛋清5个,加入几滴柠檬汁,50克白砂糖分三次加入,第一次打发鱼眼泡加入砂糖,第二次打发细腻蛋白加入砂糖,第三次打发有纹理加入砂糖,打发提起打蛋器大弯钩状即可。
  • 5.取少许蛋白倒入面糊中翻拌均匀。
  • 6.面糊倒入剩下的蛋白中翻拌均匀,烤盘铺一层吸油纸,倒入面糊震几下,震出气泡。
  • 7.烤箱提前预热,上下火150烘焙,25钟左右。
  • 8.蛋糕坯放凉,放入模具中。
  • 9.慕斯坯制作,牛奶糖放入锅中煮化,加入吉利丁粉搅拌均匀,加入草莓酱搅拌均匀放凉。
  • 10.淡奶油打发60分发备用。
  • 11.草莓糊放凉,加入淡奶油中搅拌均匀。
  • 12.食材搅拌好倒入模具中,冰箱保鲜冷藏4个小时左右。
  • 13.定型脱模,草莓味巧克力100克放入锅中小火化开,放凉,淋入慕斯蛋糕坯上。
  • 14.自然滑落,撒适量巧克力碎。
