Steps to make 手工菠菜面

  • 1.到菜园子摘一把菠菜。
  • 2.除去菠菜的根,入开水锅焯制熟烂。
  • 3.将菠菜与面粉放在盆中,不放水。
  • 4.和成较硬的面团,加盖饧面10分钟。
  • 5.用手先将面团压扁,再用擀杖先转着圈把面团橄成面饼。
  • 6.擀面杖把面饼从一边卷起,两只手握住擀面杖往前推擀,双手均匀用力,并不断移动地方。再将擀杖取开,距离刚才卷起的地方稍微偏一些重新卷起,擀制。
  • 7.如此不断重复卷起、松开,换擀面杖开始卷的地方,直至把整张面片擀到合适的厚度。撒上面粉,重新卷起并借助擀面杖将面叠起来,切成细面。
  • 8.碗中倒入酱油、醋、盐,菠菜面入开水锅煮熟后捞入碗中,调入岐山肉臊子和素臊子。
