莲蓉蛋黄月饼
马上要到中秋节了,看到好多网友都在做月饼了,我也尝试了一下!今年第一次学做广式月饼,今天做了莲蓉蛋黄月饼!

  • 低粉130克
  • 转化糖浆112克
  • 高粉14克
  • 莲蓉500克
  • 咸蛋黄19个
  • 枧水2克
  • 花生油38克
  • 吉士粉4克
  • 鸡蛋1个
  • 料酒1勺

Steps to make 莲蓉蛋黄月饼

  • 1.取一盆加入转化糖浆
  • 2.加入少量枧水
  • 3.加入花生油彻底拌匀
  • 4.再加入低粉和高粉混合粉
  • 5.加入少量吉士粉
  • 6.和成粉团放入保鲜袋里在室温内松弛2小时以上
  • 7.把咸蛋黄用料酒腌制去腥
  • 8.准备馅料:取莲蓉压扁包上咸蛋黄
  • 9.分别把咸蛋黄包好,莲蓉和蛋黄加起来35克
  • 10.按照皮与馅3:7的比例,取15克松弛好的粉压扁放上包好的莲蓉蛋黄
  • 11.用虎口慢慢爬上去,把馅料包住
  • 12.把月饼坯放入月饼模具里
  • 13.把月饼直接压在垫上油纸的烤盘上入烤箱200度烤5分钟定型,取出刷上一层薄薄的蛋液
  • 14.再次放入预热的烤箱180度烤15分钟即可出炉
