Steps to make 水煮鱼片

  • 1.买一条草鱼,一鱼三吃。鱼斜切成蝴蝶状。
  • 2.片好的鱼片放盐抓至粘稠用清水冲洗干净,这样可以去腥。鱼骨剁大块放胡椒粉、盐、料酒腌渍半个小时。
  • 3.洗干净的鱼片吸干水分后放白酒、盐、淀粉抓匀腌渍半个小时。
  • 4.绿豆芽绰水平铺碗底。
  • 5.植物油烧热放鱼骨大火煎至金黄色。
  • 6.放一小块火锅底料炒出红油。
  • 7.加入开水放入姜片,花椒、加入盐调味,大火煮滚撇去浮沫。
  • 8.捞出来鱼骨和花椒粒。
  • 9.汤滚放入鱼片轻轻用漏勺推动防止粘锅,加入老抽、生抽。
  • 10.汤滚烧上1-2分钟捞出鱼片放碗中。
  • 11.淋入汤汁。
  • 12.放入干辣椒、大蒜、香葱。
  • 13.淋上滚油,激出香味。
  • 14.滴少许花椒油,香喷喷的!
