冰皮月饼
冰皮月饼外形简约大方,漂亮时尚,口感清爽,大大有别于传统月饼。制作上,也比传统月饼简单得多,并且不用烘烤,只要原料、配方正确了,一般都能成功。我也是第一次做,感觉还是很成功的。

  • 澄粉20克
  • 牛奶185克
  • 食用油20克
  • 紫薯360克

Steps to make 冰皮月饼

  • 1.把牛奶、糖、色拉油倒入碗中混合搅拌均匀。
  • 2.加入糯米粉、粘米粉和澄粉,搅拌成没有颗粒的面糊,静置半小时。
  • 3.静置好的面糊盖上保鲜膜,大火蒸约20分钟至熟。
  • 4.趁热用筷子使劲搅拌至顺滑,然后待冷却,冰皮就做好了。
  • 5.紫薯馅,把去皮蒸熟的紫薯趁热压成泥,加入糖(根据自己的口味加)和炼乳,搅拌均匀。
  • 6.炒手粉,锅里另外放入少许的糯米粉,微火炒2~3分钟(颜色变黄)即可。
  • 7.把冰皮分成25克一份,把紫薯馅分成25克一个揉圆(50克的模具)。
  • 8.取一份冰皮揉圆按扁,放入紫薯馅。
  • 9.把面团放在手中,用另一只手的虎口转圈从底部将面皮往上推,直到完全将馅包裹起来。
  • 10.收口后揉圆,放入手粉里打个滚,然后拍去多余的粉。
  • 11.月饼模里也放入一些手粉,用手掌盖住摇晃,倒出多余的粉,使模具均匀的粘上一层薄粉,再放入月饼胚。
  • 12.压出月饼,做好后放冰箱冷藏。
