Steps to make 东坡肉

  • 1.准备三分肥,七分瘦的五花肉400克,洗净。
  • 2.五花肉切成5厘米大小的方块。
  • 3.五花肉下锅内加少许料酒焯水去腥。
  • 4.出锅晾凉。
  • 5.沙沙锅里放一个矮脚支架,在支架上铺一层姜片(目的是不让肉贴住锅底)。
  • 6.五花肉,皮朝下,在锅内码放好,加入冰糖、老抽、生抽、盐少许,倒入150毫升左右的黄酒,最好没过肉。
  • 7.先大火烧开,再转小火(最小那种),盖盖小火慢炖1个小时。
  • 8.再将肉皮朝上,再倒入150毫升黄酒,再炖1个小时。
  • 9.喜欢吃腐竹的,将泡好的腐竹放入一起再炖30分钟。
  • 10.完成。
