  • 全蛋液40克
  • 1克

  • 无盐黄油25克
  • 豆沙适量(馅料用)

Steps to make 万圣节南瓜面包

  • 1.中种做法:盆里加入酵母粉、南瓜汁溶解
  • 2.再依次加入高粉、奶粉、盐,搅匀,揉成团,放保鲜盒里盖好。
  • 3.冰箱冷藏室里低温发酵15小时以上至两倍大,为中种面团
  • 4.盆里依次加入酵母粉、蛋液、高粉、奶粉、水、糖、盐等主面团材料后,把中种面团撕成块也一并加入盆里
  • 5.厨师机慢速搅拌至出筋
  • 6.加入软化的黄油
  • 7.再用慢速搅至能拉出大片膜的完全扩展阶段
  • 8.团成光滑的一团,放进容器内
  • 9.发至两倍大
  • 10.发好的面团取出排气,切一小团,加入斑斓汁、少许高粉揉成团作南瓜蒂
  • 11.其余的面团按重量分割好,团圆,松弛
  • 12.松弛好的南瓜面团捏成中间厚边上薄的圆片,包入豆沙,捏紧,收口向下,用刮板压出纹理。也可以最后发酵完成后压。
  • 13.刷水,贴上捏好造型的蒂
  • 14.面包胚在烤盘里排放好,放烤箱里最后发酵,烤箱里要预先放上一碗开水,制造出湿暖的发酵环境
  • 15.发好的面包胚喷上水,放进预热的烤箱里,180°,烤20分钟
  • 16.烤好的面包取出放凉,再用巧克力酱画上眼耳口鼻即可
