Steps to make 蚂蚁出品-----赛东坡肉

  • 1.准备好冬瓜一块
  • 2.冬瓜去皮,切成四厘米长、宽的块,并在瓜皮这一面刻花刀,做肉皮
  • 3.切好的冬瓜抹上老抽,锅烧热,放少许油,烧到稍微冒烟,就把冬瓜块,皮朝下,放锅里煎,要用小火,煎上颜色后再煎另外四面(与皮相对的那一面可以不用煎,所以总共是煎五个面),都煎至微黄
  • 4.煎好的冬瓜块,皮朝下码在碗里。葱白,姜,半个八角(也可以用五香粉,十三香)切碎
  • 5.切好的姜葱八角倒进炒锅,不用再放油了,刚才煎冬瓜的油已经足够,等爆出香味了就调少许老抽(或者是糖色),生抽,蚝油,一点点盐,适量黄酒,用别的酒也可以,我是用自己泡的葡萄酒,有股果香味,然后再调白糖,大概一茶匙的样子吧,我的葡萄酒里放过冰糖已经比较甜,放糖的量自己看着办了,喜欢吃甜一点就多放些,记得东坡肉是不放水的哦,烧开后淋在码好冬瓜的碗里,
  • 6.然后放大火蒸十分钟,然后拿出来沥出汤汁,冬瓜,扣在盘子里。沥出的汤汁,倒锅里烧开,尝好味,然后调适量生粉水,勾芡,淋在蒸好的东坡肉上面,撒上葱花,这道赛东坡肉就算做好了。,
