葡萄干酸奶戚风

  • 细砂糖80G
  • 葡萄干9G
  • 柠檬汁5滴
  • 泡打粉3G
  • 朗姆酒少许

Steps to make 葡萄干酸奶戚风

  • 1.提前把材料准备好,葡萄干用朗姆酒泡软挤干水切成碎待用
  • 2.分离蛋白,蛋白和蛋黄分别放入不同的打蛋盆中
  • 3.蛋黄里面加入20克细砂糖,用手动打蛋器打至完全融合,再加入油和酸奶,充分搅拌至油水混合状
  • 4.泡打粉和低筋面粉放入面粉筛中,筛入蛋黄液中
  • 5.把粉和蛋黄液拌匀至无颗粒状待用,拌的时候最好用打蛋器横着来回拌,这样不容易使面粉产生颗粒
  • 6.蛋白盆里滴几滴柠檬汁或3G塔塔粉,如果没有这两个这步也可以省略
  • 7.用电动打蛋器打几下,呈比较大的鱼眼泡状,加入剩下的白砂糖的1/3继续打到比较小的泡状,再加入1/3的白砂糖,打至稠稠的霜状再加入剩下的白砂糖继续搅打至9分发,提起打蛋器蛋白霜有明显的立起的尖角状
  • 8.将蛋白霜挖一大勺到蛋黄糊中,翻拌均匀,然后把整个蛋白霜倒入到剩下的蛋黄糊中翻拌均匀
  • 9.葡萄干碎在蛋糕模底部撒一点,其它倒入到蛋糕糊中稍拌一下。
  • 10.蛋糕糊倒入到模具中,稍震几下震出大气泡。
  • 11.放入预热好的烤箱中下层175度烤36分钟
  • 12.烤好后取出稍晾一下
  • 13.将模具倒扣在酒瓶上,根据自己的模具找合适的瓶子来倒扣哦
  • 14.借助脱模刀脱模即可,吃的时候切开
