    Steps to make 红烧肉

    • 1.原料集合。
    • 2.五花肉洗净焯水。
    • 3.捞起用清水冲一下切成麻将大的小块
    • 4.姜、蒜、八角、桂皮洗干净,姜蒜拍散。
    • 5.锅擦干净,烧热后下油。
    • 6.放入姜蒜、八角、桂皮炒香,用小火。
    • 7.倒入五花肉煸炒,至两面微微呈金黄色。中火。
    • 8.肉拨到边上,加少许糖,我大概不到一勺。
    • 9.小火熬糖,用铲子画圈,两三分钟吧。
    • 10.糖熬好后翻炒五花肉,会看到糖浆汁在冒泡泡
    • 11.这个时候放调料,大约半勺香醋、一勺料酒,两勺生抽、三勺老抽,炒匀
    • 12.加足量高汤或清水,要没到肉,大火烧五分钟
    • 13.盖上盖子,小火闷一个小时
    • 14.最后用大火收汁,酌情加点盐和鸡精。
