酱香焖茄子

    Steps to make 酱香焖茄子

    • 1.圆茄子切1厘米厚的大片,五花肉切薄片,大蒜拍碎。
    • 2.煎锅上火烧热,加适量油,六七成热时下入茄子煎透煎软。(茄子吃油,先煎制时要稍微多放点,待茄子煎软后油还会吐出。)
    • 3.盛出备用。
    • 4.锅中留少许底油,下入五花肉片煸出油脂。
    • 5.下八角、桂皮、大蒜继续煸香。
    • 6.烹入料酒和酱油炝出香味。
    • 7.加入甜面酱炒匀炒香,加入盐、糖定好味。
    • 8.添入适量开水。
    • 9.将煎好的茄子下入,盖上盖用小火焖制,直到收汁儿。
    • 10.出锅时淋少许香油、撒上香葱即可。
