芝士茄子匣
米国银的茄子又粗又大皮又厚,好不威猛,用来做匣子夹肉挺好,快头够大,比较好夹肉,再撒些芝士入烤箱润色一下,还是很美味的。

Steps to make 芝士茄子匣

  • 1.把姜茸 1大勺、葱1棵的葱粒、盐1/2小勺、生抽2大勺、糖1小勺、料酒1大勺、胡椒粉1/2小勺、花椒粉1/2小勺、玉米淀粉1大勺顺一方向搅拌均匀,加2大勺水,按同一方向搅拌均匀;
  • 2.茄子去头去尾,斜切,第一刀不切断,第二刀切断,逐两片地切完整个茄子,切下来的两片不分离,形成双飞蝴蝶状,如图;
  • 3.在两片架子之间夹肉;
  • 4.在平底锅用少量油稍煎片刻,不要煎太久;
  • 5.煎过后放在涂了一层菜油的烤盘里,表面撒上马苏里拉芝士;
  • 6.放入烤箱中层,400°F,烤12-15分钟,或把芝士烤溶为止,如果喜欢颜色深些的,可相应烤长些时间,但不要烤糊。
